Baked Summer Eggs

Fresh, ripe tomatoes and fragrant basil make these eggs a tasty prepare-in-advance summer breakfast.

4 slices deli ham, Canadian bacon, or prosciutto
8 cherry tomatoes sliced
2 TBL. Chopped fresh basil
2 TBL. Grated cheese of your choice
Salt and pepper

Preheat your oven to 350 degrees.  Place 4 ramekins on a baking sheet.  Drape a slice of ham over the bottom of each.  Break an egg on top of the ham. Sprinkle tomatoes, basil, and cheese over each.  Season with salt and pepper.

Place baking sheet in the oven and bake until eggs are set to your liking;15-20 minutes.

Serves 4
