Spring is finally here and I am packing away the steel cut oats and taking advantage of fresh, crisp vegetables in my new morning ritual. Soft creamy avocado, a lovely poached egg, all topped off with a cool and spicy salsa – perfect!
2 Slices of whole grain bread – toasted
2 eggs – soft poached or soft boiled
10 cherry tomatoes sliced
1 TBL. Chopped red onion
½ TBL. Finely chopped jalapeño pepper
2 tsp. olive oil
1/2 TBL. Fresh lime or lemon juice
1 TBL. Chopped fresh cilantro, parsley or basil
Salt and pepper to taste
Combine the tomatoes, red onion, jalapeño, olive oil, lemon or lime juice, and cilantro in small bowl. Toss together, lightly salt and pepper and taste for seasoning.
Mash the avocado with a fork and spread on the 2 slices of toast, top each with an egg and divide salsa between both…Enjoy, enjoy, enjoy!!!
