No Floundering Flounder
1 pound of flounder filets
1/2 cup Italian bread crumbs
1 TBS EVOO
Sprinkle of garlic powder (not salt)
Salt & pepper
1 Tbs of butter (optional)
Put oven on broil. Cover a broiler pan with aluminum foil and spray foil with a little non-stick spray. Rinse filets and pat dry. Place fish on broiler pan and drizzle a little oil over each filet. With your fingers, spread the oil evenly over each piece. Sprinkle a little garlic powder, salt & pepper. Place fish under the broiler on the second shelf down. Let cook for 5 – 7 minutes, or until the fish is flaky. Take the pan out of the oven and sprinkle bread crumbs evenly over each filet. Place back under the broiler until bread crumbs turn golden (just a few minutes). Optional: After you remove fish from oven, melt one tablespoon of butter and spoon a small drizzle over each piece. Enjoy!
