Garbanzo Salad Snack

When my teenage son comes home from school, this is what he wants for a snack.
Of course, I am happy to oblige.
Beans make a great healthy snack. They are high in fiber, contain protein and fill you up!
Garbanzo Salad Snack
1 can of garbanzo beans (15 oz.)
1/2 cup of sliced cherry tomatoes
1/4 cup feta cheese (crumbled)
Fresh basil to taste
2 Tbs extra virgin olive oil
1 Tbs of fresh squeezed lemon
Kosher salt & pepper
Rinse the garbanzo beans, drain and place in a bowl. Slice tomatoes and julienne the basil. Add to bowl. Drizzle extra virgin olive oil over beans, squeeze in 1 TBS of fresh lemon over the top. Stir to blend. Salt and pepper to taste. Add the crumbled feta cheese and fold into the bean salad.
