Kohlrabi & Fruit Slaw

It’s CSA time and like garlic scapes and ramps, the kohlrabi is an unusual vegetable that can add a new twist to your repertoire.   Delicious roasted or added to hearty cream soups, kohlrabi can also be eaten raw.  Enjoy it in this refreshing slaw.



 2 kohlrabi bulbs peeled, sliced in thin rounds – stack and cut in matchsticks
1 Fuji apple, white peach, or mango – cored and thinly sliced
2 TBL. Finely chopped red onion
1 TBL. Finely chopped Serrano or jalapeño pepper (more if you like spicy!)
2 TBL. Finely chopped fresh cilantro or mint


Juice of 1 lime
1 TBL. Extra virgin olive oil
Salt and pepper

Place the first 5 ingredients in a medium bowl.  Whisk lime juice and extra virgin olive oil in a cup…add salt and pepper to taste, pour over chopped vegetables and fruit, and toss.
