Lemon Cucumber Thirst Quencher

This is one of my crazy creations that also happens to be the quenchable fave for me and my daughter.

It’s quick, easy, and oh so refreshing!

1 Lemon
1/2 Cucumber
2.5 Cups of water

Wash lemon and cucumber really well. Add 2.5 cups of water to the blender, add 1/2 cucumber unpeeled. Roll lemon on counter under the palm of your hand, pressing down to release the juices. Cut lemon in half. Squeeze the juice from 1/2 of the lemon into blender. Take the other 1/2 of lemon, cut three round slices and add them to blender (even the peel). Add in 1 handful of ice (more or less depending on how thick you like it.) Blend well and enjoy!

*Quick tip: I keep 1/2 a cucumber and a lemon in little baggies in my fridge for easy prep.
