When the weather turns cool, I love a nice cup of hot tea and a good book.
These days my drink of choice is a simple concoction just thrown into boiling water.
It’s so clean, simple and delicious you may find you don’t miss those little tea bags after all.
Lemon & Ginger Tea
2 cups of water
3 thinly sliced discs of fresh ginger
1/2 inch lemon rind
1/2 stick of cinnamon
scant drizzle of honey or maple syrup (optional)
Pour water into a saucepan and add ginger, lemon and cinnamon stick. Boil water over high heat for 5 – 10 minutes depending on how strong/dark you like your tea. Pour water through a small mesh sieve into your cup. If you choose, add a slight drizzle of honey or maple syrup. Stir and enjoy.
