Asparagus are everywhere this time of year. They are a delicious addition to summer salads, eggs, and pasta or rice dishes. Use this lemon vinaigrette to add zip to asparagus or warm potatoes and chopped veggies for a quick salad.
1 tsp. Dijon Mustard
Juice of ½ fresh lemon
3 TBL. Extra virgin olive oil
1 TBL. Finely chopped fresh chives
Salt & black pepper
Combine all the ingredients except the salt and pepper in a small bowl. Whisk vigorously until the vinaigrette emulsifies. Add salt and pepper to taste. Use as a light dressing for the vegetables of your choice!
