Peaches are in their full glory right now. Why not enjoy them for breakfast?

Peaches and cottage cheese are the perfect combination. In fact, you may not have realized that if you blend cottage cheese it has a lovely, light consistency just perfect for this summer parfait.

2 ripe Peaches, freshly juiced
¾ cup no fat or low fat Cottage Cheese
1 Tbs Chia Seeds
1 Tbs crushed Walnuts

Add cottage cheese and peach juice to your blender. Blend until smooth and creamy. Pour half of the cottage cheese mixture into a glass, top with ½ teaspoon of chia seeds and ½ the walnuts. Pour remaining cottage cheese mixture over the top. Add the remaining chia seeds and walnuts. Enjoy.
