Rose’s Chili

The snow in New England just keeps falling. This is the perfect pot of winter goodness to shake off the blues!
Rose’s Chili
1 medium onion chopped (red or white)
1- 2 Jalapeno peppers seeds removed, chopped fine (wash your hands!!)
3 cloves of garlic minced
1 pound ground beef
1 28 oz. can crushed Fire Roasted tomatoes
3 15 oz. cans of beans – drained (pinto, kidney, black…whatever you like)
2 Tablespoons of chili powder
1 teaspoon oregano
pinch of sugar
salt
pepper
Heat olive oil. Add onion, 1 chopped pepper, and 1 tablespoon chili powder – sauté until fragrant about 3-5 minutes….add beef and garlic sprinkle – with oregano, more chili powder and salt and pepper – break up and sauté until cooked through.
Add tomato sauce a pinch of sugar and beans. Cook another ½ hour to 45 minutes. If you want it spicier, you can add the other jalapeno pepper.
Serve with your favorite condiments:
Avocado
Grated cheddar
Chopped onion
Diced jalapeno
Cilantro
Serves 4-6
