Spiced Pears and Oats

During the winter months steel cut oatmeal is perfectly warm and yummy.  Add some fiber rich pears and toasted almonds and you have a real breakfast treat! 

Poached Spiced Pears and Steel Cut Oatmeal               serves 4
Refrigerate extra ingredients and heat in the microwave for a quick breakfast later in the week.

4 pears – peeled, cored and halved (I prefer Bosc)
1 cinnamon stick
1 whole star anise
4-5 whole peppercorns
1 TBL. Honey
2 cups water

Steel Cut Oats
1 cup of steel cut oatmeal
1 tsp. olive oil
2 cups water
Pinch of salt
½ cup lightly toasted sliced almonds
Optional: Ground flax seed

Add all of the pear ingredients to a heavy bottom, medium saucepan. Bring to a boil and reduce to simmer.  Simmer for 30 minutes, or until pears are tender.  Remove pears, turn up the pear liquid and boil gently until the liquid is syrup consistency.  Strain to remove spices.  Cool syrup and refrigerate for future use.

Heat olive oil in a saucepan.  Add oats and sauté until warm and fragrant.  Add water and salt.  Bring to a boil and reduce to simmer.  Cover and cook until tender 20 minutes.

To serve
Add ½ cup of steel cut oats to a bowl, sprinkle with flaxseed.  Cover with ¼ of a chopped pear, 1 tablespoon of almonds, and a drizzle of the pear syrup.  Add a splash of milk of your choice if desired.
