My sister Annette challenged me to come up with some recipes for her upcoming Flat Belly Detox. Even with the limited ingredient list this slaw is delicious – detox or not!
Spicy Red Cabbage and Mango Slaw
½ small head red cabbage thinly sliced
½ fresh red Fresno chili pepper finely diced
½ TBL. Coconut oil
Juice of ½ a lime
Salt and pepper to taste
1 TBL. Chopped fresh cilantro
½ fresh mango diced
Heat the coconut oil on medium heat in large skillet with the chili pepper for 30 seconds to infuse the oil. Add the cabbage, salt lightly, and toss with tongs just to heat it through and infuse with the coconut oil. Toss the cabbage into a large bowl and add lime juice and cilantro. Add salt and pepper to taste. Add mango just before serving so it doesn’t turn pink.
