This sandwich is so satisfying and you get 3 different veggies!
1 Multi-Grain Wrap
¼ soft Avocado
Handful of Baby Spinach
3 – 6 slices of Deli Turkey Breast or 1 (palm-sized) leftover grilled Chicken Breast
1 Tbs. of Antipasto Peppers (in vinegar), drained
1 tsp. of Low-Fat Goat Cheese Crumbles
Heat wrap in microwave or oven until just warm and soft.
Spread Avocado in a column down the middle of the wrap. Place baby spinach leaves on top of avocado. Place turkey slices on top of spinach. Top turkey with antipasto peppers and sprinkle with goat cheese crumbles.
Roll the wrap by folding up the bottom first. Fold the right side over and then the left side. Wrap a napkin around sandwich to hold it in place.
Pair this sandwich with a handful of baby carrots for crunch and a glass of water.
Healthful Tip: – This sandwich travels well. Just wrap it tightly in a napkin. Before eating, I like to pop it in the microwave for a few seconds to get the juices rollin’.
